Back from a hiatus- Salsa Verde Enchiladas

One of my favorite and EASY dinners to make- delicious salsa verde beef enchiladas!

You can see I made a few using corn tortillas- those are for my fiance! However I prefer flour over corn tortillas.

First, preheat the oven to 400 degrees.
